* Tofu – firm kind. 1 block.
* Onion – 1 medium sized.
* Sweet mini peppers – about 8 of them. I chose red ones.
* Frozen green peas – half cup.
* Garlic – 4 to 5 fresh cloves finely minced.Cooking oil – 2 tablespoons.
* Ground turmeric – half teaspoon.
* Ground Allspice – 1 teaspoon.
* Low sodium soy sauce – 2 tablespoons.
* Lemon juice – 2 to 3 teaspoons.
* Salt and Pepper – to taste.
Procedure:
Step 1 – drain the liquid from the tofu tub, extract water out of tofu and then with a fork shred it into smaller pieces. Set it aside.
Step 2 – In a skillet, sauté chopped onions until golden brown. Add turmeric, minced garlic and sliced peppers. Saute for a couple of minutes. Add frozen peas and spices and sauté for 5 to 8 minutes.
Step 3 – add shredded tofu, soy sauce, lemon juice, salt and pepper and let it cook until tofu isn’t raw. Garnish with cilantro or spring onions if desired.
Eat the scrambled tofu by itself or add it to other dishes such as stir-fries, salads, or veggie stews. Enjoy!

Lovely video montage and very easy to follow. Definitely looks like a delicious Tofu Jambalaya although it’s not a jambalaya but it just reminded me kinda of it.
