Veggie Quesadilla. Potatoes, avocado, tomatoes, lettuce, and cheese. Kind of weird. I’d try it again at a different truck 🤷🏼‍♀️

  1. Frustrating when the beans aren’t veg. Often they’ll do multiple types, like pintos and black beans and keep at least one of them meatless. But there’s no consistency between vendors. Lard is pretty common in refried beans. If more customers spoke up they would probably accommodate. Most don’t care; we do.

    The potatoes are a little unusual but the combo sounds good. The avocado, tomato, and cheese sound good with what looks like sour cream.

  3. I had a vegetarian taco recently at a restaurant. One of the best things I’ve ever tasted. Charred and diced mushrooms were kind of the meat replacement. Grilled onions and peppers and great salsa. I think a little bit of cheese too.

  4. Definitely do a little research on Mexican food. It’s really easy to make it vegan or veggie heavy. There is an abuelita on YouTube with a channel called de mi rancha a tu Cocina who cooks all kinds of sruff and there is Doras table on IG too if you dont feel like reading. Baja style Mexican food is really fresh.

  5. It’s unfortunate that America thinks tex mex is Mexican food. The Mexican cuisine actually contains a lot of vegetarian dishes.

  6. There’s a food truck (turned store-front) near me that ONLY serves vegan and vegetarian tacos, and they’re amazing. They’re also Mexican/Indian fusion, so the flavors are unique and honestly really good.

    They have spicy black bean tacos, paneer Al pastor, mushroom carnitas, masala soyrizo, paneer diablo, mushroom tikka tinga, and spicy potato tacos.

    I guess what I’m saying is vegetarian tacos can be done REALLY well when they’re the main focus!

  7. This reminds me of a breakfast burrito I got from a taco truck. To me, a breakfast burrito is, at a minimum, beans, cheese, egg, salsa. Chorizo maybe. What I got was basically a tortilla wrapped around hash browns with minuscule amounts of egg and some kind of gringo sausage. I kept myself from asking “what kind of Mexican are you? Have you no pride?” I just made a show of throwing it in the trash.

  8. I was at a texmex place once and ordered the veggie quesadillas. Should be good, considering all the peppers, onions, and squash they use in various meals. Nope. They chucked frozen mixed veggies in it. Cubed carrots, peas, corn, and broccoli. It was awful.

  9. I would be over the moon and so happy with that personally! Lots of places that have to make exceptions for Vegetarian for me just tell me they don’t have anything.

  10. I went to a wedding catered by a taco food truck. The meat options were chicken and pulled pork. I’m have some flexitarian tendencies so I tried a bite of my friend’s pork taco and the seasoning and texture were perfect. The veg option was sweet potato and the sweet potatoes were boiled and completely unseasoned; they didn’t even have salt on them. They were the designated veg option!

    It was a backyard wedding so I ended up being able to steal some Cholula from the kitchen so I could inject some flavor.

  11. We used to have a local vegan place that made fried oyster mushroom tacos that I would stab a bitch for.

    I told them how devastated I would be if they ever closed. They said they had no intention of closing. Woman looked me dead in the eye and *lied*.

    I’ve never been the same.

  12. Went back home to rural Kansas. Mom took me out to a New Mexican restaurant. Those are usually my safe zone because there are enough ingredients to make many vegetarian/vegan options. This restaurant had a full two sided menu with *tons* of options and only *one* vegetarian option that was essentially a tostada with a cheap salad topper on top of a small smattering of beans. Had to ask for a side of guacamole to fill it out.

    Might move back and open a vegetarian heavy restaurant across the street out of spite.

  13. I feel your frustration. On the other hand, it’s a little bit like complaining about the salad you got at the butcher’s.

  14. They have a Mexican food place in a gas station off of Hwy. 40 here. The quesadillas have different fillings according to specific regions of Mexico’s cuisine. I forget which region they offered but their vegetarian quesadilla had mushrooms and chipotle peppers. I’ve been meaning to go back, you just reminded me of that place.

    That’s just sad.. they could do a black bean, cheese, lettuce, fajita veg taco? With salsa, cilantro, sour cream and a squeeze of like on top? Stuff one would presume they already have on a taco truck.

  16. in all fairness if you go up to a truck with 0 sofritas, beans, or rice (or if those ingredients have been cooked in meat stock) you kind of got what you asked for. maybe ask what’s veggie next time and you won’t be as disappointed

    Though avocado, tomato, lettuce makes an ok meal
