Puree 4 ripe avocados with half a lime juice and zest, 2 cloves of garlic, salt, pepper, 1tbsp fresh chives and 1tbsp modified starch to slightly thicken the cream. Dice beetroots and fry them in sesame oil with toasted sesame seeds. Use a smoke gun to smoke the fried beets, let it rest in smoke for half an hour. Pipe the avocado cream in a pastry ring, top it with the beetroot. Remove the pastry ring and decorate the plate.
