    However, I have always added summer squash to my ratatouille, and this time used 4 total peppers (one each red, orange, yellow and green) so I only used one eggplant.

    I used the entire small can of tomato paste and I like rosemary in my ratatouille, probably at least a tablespoon. (I don’t measure I’m sorry. I add until the voices on my ancestors say “enough child” but we’re deeply white, so take that with a small amount of pepper).

    I’m very happy how it turned out.

  2. Thinly sliced and drizzle with passata, the only way I would have ratatouille… but each to their own & this looks really good

    Congrats on making a real ratatouille and not a tian! this is the way

    One thing I like to do is to put half a lemon in the pot, it gives a nice zing to it.
