Lemon Blueberry loaf using regular box cake mix. Very easy! 89 cals per slice

  1. This recipe made two loaves. The loaf pictured is 39% of the batter. Made 8 slices per loaf.

    box of mix

    1.25 c water

    2 tsp baking powder

    1 tsp oil

    ½ T Just egg

    130 g blueberries (I used frozen that had been thawed)

    lemon flavoring or lemon juice. (I used concentrated [True Lemon](https://www.amazon.com/True-Lemon-Shaker-2-82-Ounces/dp/B001Z2TTMM)).

    Mixed everything but blueberries and then fold them in last. Pour batter into two wilton 9 x 5 non-stick loaf pans (spray the pans first or line with parchment).

    Alternatively you could make muffins. A simple lemon glaze would be really nice too.
