Eggplant and mushroom fettucine

    A favourite vegetarian pasta, i love this because its so easy, tasty and comforting.

    Recipe: 
    half eggplant diced
    3 swiss brown mushrooms sliced
    3 button mushrooms sliced
    half brown onion diced
    tablespoon minced garlic
    2 tablesooons olive oil
    1 teaspoon italian herbs
    1 tablespoon tomato paste
    half cup water (may need alittle more and i like to add a little pasta water)
    salt and pepper to taste
    fettucine pasta (could use penne or spaghetti too)
    parmesan to serve
    fresh basil to serve

    Method:
    heat up some water and salt in pot ready to cook pasta
    brown onions with olive oil in a pan, add garlic once onions are alittle cooked
    add mushrooms and eggplant and cook through
    add italian seasoning, tomato paste and water and allow to cook on low for about 30 minutes
    add seasoning to taste
    cook fettucine and mixed altogether in the pan
    bowl up top with parmesan and basil 😋
