I loved this dinner, it was my first japanese fine dining experience. I opted for the Sakura tasting menu.

The entrées were fried nori seaweed, yuzu salmon carpaccio and shokupan with tuna tartare.

Then I tried the amberjack (ricciola) ceviche with passion fruit sauce.

After that, sushi omakase with freshly grated wasabi (I don’t really remember what every piece was, sorry). The first two pieces of sushi were incredible, my favourite sushi ever.

The third course was the ramen, it was traditional in every way except for the noodles which were piedmontese tajarin pasta.

The main course was miso marinated pollock with teriyaki sauce and some kind of citrusy sauce too. It was incredibly tender, loved this one too.

The dessert was a “fake” cherry with chocolate, cherry sauce and raspberry gel.
