Tofu stir-fry with bell pepper and tomatoes.

    Ingredients:

    Tofu — firm kind. Drain liquid, pat dry and cube.

    Onion, Bell pepper and Tomatoes — chop into small pieces.

    Garlic and Ginger — finely minced.

    Cooking oil — I prefer toasted sesame oil.

    Turmeric — 1 tsp.

    Sesame seeds and parsley flakes — to garnish.

    Salt & pepper — to taste.

    Cooking instructions:

    In a saucepan, sauté cubed tofu in a little bit of sesame oil on medium heat until browned. Remove from the pan and set aside.

    In the same saucepan, sauté onion until browned. Add turmeric, minced garlic & ginger, chopped bell pepper and tomatoes and cook until the tomatoes are softened. Add the sautéed tofu, salt and pepper and lemon juice if desired. Garnish with sesame seeds and enjoy!

    You can serve it over a bed of rice or couscous or bulgur wheat or even wrap it in a tortilla. Well, I just ate it by itself 🙂
