I used the recipe as followed, except I subbed the chicken for tofu. Thawed frozen tofu, cut it into chunks, marinated it slightly in soy sauce to draw out water, and seared it in a nonstick skillet with sesame oil. Seasoned the tofu with a bit of the pizza sauce as well before throwing it on the pizza.
ETA: I used a bagged “Mexican Style” cheese blend instead of mozzarella because it’s what I had on hand. I actually think the cheddar blend prob ended up going better with the sweet BBQ flavors anyway.
