I was so happy to get to experience the pop up in its short time in Japan. The whole front of house seemed genuinely excited and enthused by being there – and talked excitedly about the research that had gone into designing the menu. Every single course was both beautiful and delicious – something that I’d found wasn’t the case the last couple of seasons in CPH where frankly the food aimed to be challenging rather than enjoyable.
All in all a once in a lifetime experience and Noma at its very best – reinvigorated and reignited.

  1. Super envious. The green tofu with almonds, what was it coloured/flavoured with?

  2. Looks like a blend of the best of summer and seafood seasons in Copenhagen, with beautiful local flares.

I really liked the Game season a few months back, but considering that menu in a rough sense has been around for five years now makes this look seriously interesting in comparison.

Going forward if they do a lot more of this kind of thing around the world seems like a genuinely great way to reinvigorate the “brand”, especially when other restaurants even in Copenhagen like Alchemist have been breaking new ground while Noma was beginning to settle.

  3. Did anything accompany the menu as the end of meal “gift”? I got a little woven crab made during their time in Mexico for the pop up. It must have been such an amazing experience! Thank you for sharing 🙂

ETA – did you do a beverage pairing?

  4. Ive been meaning to post my lunch there as well since they gave me a vegetarian modification and it was probably the best meal I’ve ever had.

My husband and friends nearly floated off their chairs from the rockfish and that’s the only dish I wished I tried.

  5. Looks awesome, we were there in Kyoto when they were there but I couldn’t justify the price tag

  6. UnluckyChemicals on

I’m new to this subreddit and fine dining so I don’t really understand the appeal but like I feel like you got scammed on that swordfish and lobster THREE slices and they gave you only a lobster tail but left half the shell to be like “we have the best part but we aren’t gonna give it to you”
