Tofu feta is the best! I like to do a quick sauteed chard with tomatoes and tons of garlic, add some chickpeas and tofu feta as a warm salad. You could serve it over rice to stretch it too.

Probably a silly question but I’ve never cooked with eggplant. So how do you cook it? Like, do you just live it up and pan fry? Or did you salty it first to get the moisture out?
