Well, it’s beef. Beef is red. Color just intensifies as it loses water but it shouldn’t discolor since O2 can’t reach it.

Well, my no nitrate salt box pork tenderloins also end up red, so I’m not surprised. But I’ll parrot everyone saying that the intensity of colour is likely from absorbing some of the beet
