I cure my bellies using
2.75% salt,
.25% cure #1
1.75% brown sugar
1.8% crack black pepper
.5% chilli flakes
.5% rosemary
.5% oregano
.15% bay leaves

They aren’t getting dry enough quick enough hanging in my walk in fridge, I’m not investing in a curing chamber.

Has anyone experimented with using this an EQ cure, for 10 days + and then removing washing and then salt boxing for a couple of days just to remove any excess moisture? Just trying to build up a stock and they keep selling out!

Any suggestions would be appreciated
