I had a lot of potatoes so I started freestyling. Peeled cooked and mashed the potatoes (I used about 6)
, mashed in some chickpeas(1 can), then came very finely chopped leeks (the white and light green of 1).
To keep it together I added AP flour and Oatmeal.
(about 1/2 cup flour, 1.5 cups oatmeal)
For flavor a little bbq sauce (2 tablespoons), soy sauce (1 tablespoon), garlic and onion powders, salt, pepper (teaspoon each), and of course nutrients yeast (1/4 cup).
Rolled into small balls and fried on all sides in a small amount of vegetable oil (Just until golden) Finally I put them in the oven on a wired rack for 30 minutes at 350°.
For the pasta I simply cooked Chickpea pasta ( about 2/3 of a box) and added some reserve water to Greek yogurt (2 cups), then garlic (1 clove), parmesan (1/4 cup), salt and pepper (to taste)
Sorry if the measurements aren’t exact I’m a real “cook by feeling” type of guy.
