  1. 5 servings:

    * 1 bag [Beyond Steak](https://www.walmart.com/ip/Beyond-Meat-Beyond-Steak-Plant-Based-Seared-Tips-10-oz/1888369115)**** (or some other type of seitan)
    * Turnips, 184 g
    * Potatoes, 298 g
    * Onion, 273 g
    * Carrots, 191 g
    * Parsnips, 100 g
    * 2 cups frozen peas
    * Parsley, ¼ cup
    * bay leaves (1 or 2)
    * 8 oz Guinness or other Irish stout
    * 2 cup beefless broth
    * 3 T flour*
    * ½ tsp salt or more to taste
    * ¼ tsp pepper or more
    * spray oil for pan frying (cals included)

    ​

    1. cook vegetables until almost done**
    2. add broth, parsley, bay leaves and simmer until veggies are tender
    3. add flour dissolved in ½ cup water
    4. stir and simmer until thickened
    5. brown Beyond steak and add to stew***

    *I used lower calorie Fiber Gourmet flour, but the amount is so little that it really doesn’t matter which kind you use.

    **I pre-cook my vegetables before adding broth because I like the caramelization. You can cook them however you prefer like in a slow cooker for example

    *** I add Beyond steak last because I don’t know how it’s going to hold up in the broth. I was concerned it would get soggy, since it’s not actual meat.

    **** Beyond steak is basically seitan with faba beans and other ingredients. Use whatever vegan protein you want.

    Note – original recipe had diced tomatoes, but I forgot to add them! It was great without,but add tomatoes or tomato paste if you like.
