First harvest from charcuterie fridge
Hello all.
Set up a charcuterie fridge at work.
Here is my first harvest from it.
Coppa and lomo
Some plain
Some spicy
Some with fennel pollen
Pig breeds are Berkshire, mangalitsa and ossabaw
Lots of things currently working in the new set up but these are the first things I’ve taken out.
What do y’all think?

Great color on all of these, great water distribution and great fat caps on those loins. Are you water activity testing or just checking their weights? Coppas seem slighty wet, but thats not a bad thing.

That lomo looks crazy. Mangalitza I suspect.
