    – 1 package of xfirm tofu
    – ½ red onion
    – 1 T chopped ginger
    – 4 cloves garlic
    – 1 tsp cumin
    – 1 tsp coriander
    – 1 tsp turmeric
    – ½ tsp chili powder
    – 1 tsp garam masala
    – 1 tsp fennel seeds
    – 1 tsp salt
    – 1 ½ cups diced tomatoes
    – .75 can coconut milk
    – cashew milk, ½ cup
    – 1 red bell pepper
    – 270 g cauliflower
    – 1 zucchini
    – sqeeze of lemon & dash of sweetener to taste
    – cilantro for garnish
    – spray oil for pan frying (included in calorie count)

    Pan fry onion, ginger, garlic / add spices, cook til slightly toasted/ add tomatoes
    Stir in coconut milk & cashew milk and then add pre-browned tofu and veggies. Simmer and let sauce thicken. Add squeeze of lemon and optionally sweetener to taste

    Instead of a full can of full fat coconut milk I used a 3/4 of a regular can and added in 1/2 cup cashew milk. This saved a lot of calories. Also eliminated the pour oil in the original recipe and pre-cooked my vegetables before adding them to get some carmelization and quicker cooking time. The cauliflower was microwaved for a couple minutes before adding it to the pan.
