I omitted the egg for vegan egg wash using Just Egg brand scramble mixed with water.
I also omitted the cilantro lime sauce with a home made vegan ‘crema’.
1 cup vegan sour cream
Half cup cilantro
Two green onions chopped
Chopped jalapeño
Juice of two limes
Blended for a few seconds.
I poured that onto shredded cabbage and carrots, and chilled for about 20 minutes while the avocados fried.
I topped the tacos with the crema ‘slaw’ and fresh jalapeños, as well as Desert Pepper black bean and corn salsa.
Everything tasted so fresh and was super filling!

I finally got to make fried avocado tacos today!
