The Hodo tofu (from Target) is really tasty. Couscous salad is just mint, lemon zest, pomegranate seeds, and couscous. I cooked the couscous in broth for added flavor. The round container of pomegranate seeds, top right, is not part of calorie count.
That looks really yummy! Is the package of tofu 1 serving or can you get two lunches out of it? Also is this something you typically eat cold or do you warm up the tofu/couscous?

This looks so good! Definitely going to be looking for that tofu at target now. And idk why I’ve never thought of putting mint and pomegranates in my couscous…. That’s genius!
The Wildwood brand teriyaki tofu is another delicious ready-to-eat, pre-seasoned/cooked tofu as well which I prefer to the hodo (though it is sweeter/smokier and uncut)
