  1. Ingredients for 3 servings ( one serving is pictured) of Moroccan Spiced Chickpeas is:

    1/2 onion sliced

    1/2 clove garlic, minced

    1/2 tablespoon each – chili powder and cumin

    1/2 teaspoon each – turmeric and garam masala

    1/2 teaspoon sea salt

    dash of each -cinnamon and cayenne (to taste)

    15 ounce cans chickpeas, drained and rinsed

    14.5 ounce cans fire roasted diced tomatoes

    I used 1/10 of a box of roasted garlic couscous (Near East brand). I didn’t add oil.

    The cucumbers are topped with a dressing of lemon + vegan yogurt.

    Pita pieces were made by cutting one side of a pita into 6 pieces.
