    Recipe at the end. I got a gorgeous loin from my local butcher (Salt & Time, fantastic) and turned it into three Lonzino. This is the last one to get ready. It’s been hanging since August of 2022, and is freaking delicious.

    It really does look awesome but the whole piece your slicing from looks a little dry or hardened and would probably benefit from a vacuum rest for a while

  5. Jesus I read that title too quickly as ‘Lonzino died a little over 6 months ago.’ And then I see an image of meat getting sliced.
