Soppressatta, 5 weeks in. Pretty sure the zip ties at the end weren’t tight enough. Already had some casing separation from the meat, but I’ve seen that before and been fine. But now I’ve got mold in that gap directly on the meat itself. Is best practice to just toss it? Probably talking about 40 or so sticks.

peel, wipe with 50% vinegar and vacuum then?
