yea I never put in mushrooms either. The potatoes and carrots are bulky enough to hold the sauce, and I’m not worried about replacing the “meaty” texture.

My favorite pot pie (and one of our family’s favorite gravies) is an old recipe from Tofu Cookery! Very similar to this one but I dredge the tofu in some spices and bake first. Comes out absolutely fantastic every time.

Your crust looks amazing! Agreed on skipping the mushrooms. In the past I’ve added in diced Gardein chicken pieces to mine but this looks great on its own.
