Thanksgiving-themed rice with green beans, sweet potato and cranberries.

    Ingredients –

    Rice 1 cup, onion 1 medium sized, sweet potato 1 small sized, fresh green beans 12oz bag, dried cranberries 1/3cup, garlic 4 big cloves, ground allspice 1/2 teaspoon, 2 tablespoons cooking oil, salt and pepper to taste.

    Cooking instructions –

    Step 1 – Cook rice in 2 cups water or vegetable stock. I use an electric rice cooker. When done, fluff up and set aside.

    Step 2 – chop onion into small pieces, chop green beans into half inch thick pieces, peel and chop sweet potato into small pieces to match the green beans in size, finely mince garlic cloves.

    Step 3 – I highly recommend a wide bottom skillet or a wok for an even sauté of the veggies. A deep saucepan will probably not work as best.

    Heat cooking oil in the skillet on medium heat and sauté chopped onion until lightly browned. Add chopped sweet potato and chopped green beans and sauté until they’re tender (about 10 mins on slightly high heat). Add minced garlic and sauté for another minute or so.

    Step 4 – Add cooked rice, dried cranberries, ground allspice, salt and pepper to the skillet. Mix evenly. Turn off the heat. You may add some chopped walnuts if you desire.

    This goes well with Thanksgiving gravy or even a simple hot sauce. Enjoy! 🙂
