Tofu tacos with cilantro lime coleslaw

    I didn’t follow any recipe so I’ll give my own instructions.

    **tofu**

    1/2 lb extra firm tofu
    3/4 cup cornmeal
    1/2 tsp adobo seasoning or seasoned salt
    1/2 tsp powered coriander
    1/2 tsp garlic powder
    Black pepper and cayenne pepper to taste

    Mix cornmeal and spices in a ziplock bag
    Cut tofu block into pieces and put them in the bag. Shake until all pieces are thoroughly coated. Fry in about 1/4 inch of oil by frying one side at a time until dark golden brown. Drain on paper towel.

    **coleslaw**

    2 cups of bagged premixed raw coleslaw (shredded cabbage and carrots)
    3tbsp sour cream
    1tbsp lime juice or to taste
    1tbsp chopped cilantro
    1tsp adobo seasoning or to taste

    Suggestion for next time: toast the tortillas in the toaster oven, it makes them a bit crispy without adding any more calories, delicious!
