    I didn’t test the pH after fermentation and being my first time I’m scared.
    Should I eat the test piece?

    Can I test the pH now with a meter to see if it is safe to eat?

    I used a pH strip by mushing a bunch of the salami into distilled water and it came out at 5ish from what I could from the colours.
    Not super confident in that as a scientific method however.

    I should also mention that this is a 54% weight loss over a month as well. I have vacuum sealed the remaining Salamis to stabilise.
