Ingredients:
-3 cups of zucchini cut small (it’s about 4 small zucchini)
-1 small white onion chopped small
-1/2 cup of shredded cheese (I used 1/4 cup of vegetarian Parmesan and 1/2 cup of mozzarella)
-salt and pepper to taste
-3 eggs
-1/2 cup of olive oil
-1 cup of Bisquick
1. Mix Bisquick with eggs and oil
2. Add rest of ingredients to Bisquick mix
3. Put in a greased pie dish and bake for 1 hour at 350°

I make one that I think I got from Julia child that doesn’t have bisquick and it is also great – surely easy to look up if you run out of bisquick. This is also the type of thing you can throw another vegetable in if you see something in your fridge on the verge.

Looks like a quiche. It appears that you did not saute the zucchini first. I make a great spinach/cheese quiche.
