Looks amazing!
But personally I absolutely hate having to make decisions like this.
Part of the reason I pay for and go to fine dining restaurants is to have an experience where I’m not making choices and not feeling like I’m missing out on anything.
I can see it for wine pairings, but even then I would rather they just have one option pairing that has small-ish glasses.
