Chorizo style, recipe from Olympia Provision. I didn’t spray this with 600 but back batches by dusting off a previous batch that had lots of mold 600. In climate controlled environment; 13C & 80rH
Removing the natural hog casing, nothing was underneath the casing or on the chorizo.
When in doubt, throw it out! But what do y’all think? Is it black mold?

  2. I think it’s a 50/50. Mold 600 when goes extra thick can have off colors. It’s really hard to tell from you pics

  3. Black mold is bad. Full stop -toss . Green, you can clean, white you can walk away.
