Measurements aren’t exact, but this recipe doesn’t require exact measurements. Made 4 portions.
Sautee an onion and a LOT of garlic in a pot (I used a bulb of garlic). Add slices of ginger (2 thumbs worth).
Add a couple of tablespoons of miso and hot water. 1 tap chilli flakes. Simmer.
Add veg – I did chard and beetroot stems, and cabbage. After they had softened I added the chard and beetroot leaves.
Separately, I cooked tofu in the air fryer (drained, pressed and marinaded in sriracha and soy sauce) but you could also just throw in cubes of raw tofu into the soup.
I also cooked the mushrooms separately in soy sauce and liquid smoke.
You could add any veg at all to this!
Finally I cooked noodles separately, but if you were serving the whole pot you could cook noodles in the soup. Seasoned with soy sauce and black pepper.
Also, an egg can be stirred through for extra protein or as tofu alternative.
It was extremely comforting and tasty!

You can get that same browning with a pan a little oil.
Nice looking soup. I’d be all over that.
