I love that mirror! The most annoying thing when asking for a counter seat is the lack of a decent view of the action — sometimes it’s like trying to peer over a hedge to spy on a neighbour.
Or being seated opposite to the lowest-ranked kitchen guy who just seems to cut potatoes for 4 hours.
Although in the end, the chefs are probably putting together things they’ve been prepping since the very morning anyway. I think Aulis under the patronage of Simon Rogan has been the best to really include the guests in the entire process.
