In India we used these dried peas to make a gravy- sort of curry, with a base of onions, tomatoes, ginger + garlic and spices (garam masala+ whole spices).
A famous street food dish called _Ragda Pattice_ features this along with a patty/ cutlet made from potatoes.
Do you like curry? There are lots of Indian curries that feature peas, I have a friend who uses dried peas for this. They are not as sweet as frozen peas, more starchy like a bean.
That being said, I’m sure you can make like a southern style bean preparation, slow cooked with a bit of broth and some smoked pork or bacon. Have with rice.
