Ingredients: 1 bag of green split peas,
1 onion,
4 cloves of garlic,
1 red bell pepper,
baby bella mushrooms,
carrots,
celery,
3 tbsp of tomato paste,
2 tsp of lemon/lime juice ,
pumpkin seeds,
2 cups of coconut milk
3 tsp of cayenne
4 tsp salt
1tbsp red crush pepper flakes
3 tsp of cumin
thyme (optional)
I threw the bag of green split peas in boiling water for 30 minutes, then took it off the flame and let it soak with a lid for about an hour, within that time window I gathered the onions, peppers, garlic, pumpkin seeds, and carrots, and threw that in some sizzling canola oil with cumin, salt, cayenne, and simmered on medium heat covered. I then remove the lid from the lentils and see froth, I drain residual froth out until water is clear. Once lentil and water is fully clear, I then put it on high flame to increase temperature of cold water I rinsed them in. Bring water with lentils to a rolling boil, drop in all those veggies that were sizzling and sweating and the canola oil along with it inside the pot with the lentils. Add tomato paste, and stir. Add coconut milk last, and sprinkle w/ thyme.
