No dairy, truly very cheap to get all of the ingredients. Made enough for 3-4 servings. Creamy and warm and perfect for this weather. Highly recommend! Took me about 45 minutes to make.

You posted another curry photo recently, right?
I’m happy for you that you’re making some tasty veggie dishes, but I feel like you could add more variety. Color, sides, extra veggies in there, etc. A tomato soup or a curry with a bunch of leaves on top looks fine, but there’s a lot more you could do with both of those dishes.

Made this for meal prepping at work. I’m a picky eater and I LOVE this. If anyone dislikes zucchini (like i do) – grate it into soup rather than chopping. Still gives the fiber but no chunks
