Tried the new low calorie, high protein Fiber Gourmet pasta “rice.” It’s really good and better than other rice subs, imo. Made a dish with it: lime vinaigrette, black beans, tomato, bell pepper, pasta rice, corn, cilantro, red onion.

Has 7 grams of protein per 110 calories (per 3/4 cup prepared rice). If you like Fiber Gourmet pasta you will like this. The seasoning was really good. I got the other flavors (Spanish rice, garlic herb) but haven’t tried them yet. Will update!
To make rice pasta salad:
1/4 c black beans
1/4 c corn
green onion
1/4 cup riced pasta
red onion
2 chopped small compari tomatoes
1/4 orange bell pepper
dressing: lime juice, sugar, salt, water, tsp neutral flavored oil
If you ever used Fiber Gourmet pasta you know that when you cook it it plumps up a LOT. 1/4 cup dry “rice” becomes 3/4 cup prepared “rice”.
Unfortunately they don’t give your very much “rice” in the package and it’s expensive. So I would only use this for meal prepping something like this dish where I only need 1/4 cup to make it. On a per serving basis it’s too expensive, imo, but worth it if you just want a little rice in your dish. For example, here I only used 77 cents worth of the product. I think this would be really good in a tomato based soup.
This looks delicious!!!
Hasn’t pasta ‘rice’ been a thing forever? It’s called risoni. Not throwing shade though
Ohhh….I haven’t seen this variety. I love their other ones, so I bet this would be just as good.
I wonder if you add more greens like parsley or something else, medium sliced Romain and Bulgar (soaked not cooked) would add to a better texture. What did you use for seasoning ?
