This turned out really good! I made a vegetarian version rather than vegan. I wouldn’t add sugar to the Eggplant marinade next time because the thousand island is sweet enough.

Reubanizing any veggie substitute for corned beef has been one of my great joys in life since giving up meat. Not surprisingly, pretty much everything works. I haven’t tried eggplant yet, but I definitely will!
pro tip: if you ever find yourself at a typical diner type restaurant and the only option is a crappy frozen veggie burger but they also make Reubens, have them sub the veggie patty for corned beef. Automatic upgrade and most places I’ve been to don’t mind the substitute.
