• Eggs, 4.
• Zucchini, 1/2 medium-sized.
• Fresh thyme, 1 tsp (or 0.3 tsp dried thyme).
• Fresh tarragon/OR basil, 2 sprigs.
• Garlic, 2 cloves.
• Low-fat cream, 4 tbsp.
• Cherry tomatoes, 5-6 pieces.
• Mozzarella/Parmesan/goat cheese (~100g) OR as much as you like.
• Salt and pepper to taste.
Instructions: Preheat the oven to 230°C (446°F).
1. Slice the zucchini into thin circles.
2. Saute (fry) finely chopped garlic and add zucchini and thyme to it 3-4 min
3. Add cherry tomatoes to the zucchini and cook for a few minutes.
4. Whisk the eggs with the cream and season with salt and pepper.
5. Once the zucchini and cherry tomatoes are ready, transfer them to an oiled baking dish. Sprinkle fresh tarragon over the vegetables. Pour the egg mixture over everything and generously sprinkle the top with grated cheese.
6. Bake for 8-10 minutes until it is golden brown.

It won’t make a difference to the recipe if I omitted the tomatoes? Histamine issues and all 😑
