Beyond Meatloaf recipe (makes one loaf, 8 slices):
– 1 pack Beyond Meat
– 55 g celery, finely diced
– 74 g onion, finely diced
– 2 slices of low cal bread, toasted and crumbled
– 1 T oat fiber (optional)
– 1/4 c no sugar added ketchup
– 2 T Dijon mustard
– 2 T soy sauce or vegan worcestershire sauce
– 1/2 T nutritional yeast (optional, but helps bind)
– 1/2 tsp garlic powder
– 1/2 tsp smoked paprika
– 1 T Just Egg or other binder
Mix meatloaf ingredients and bake at 350 F for about 30 to 35 minutes in loaf pan. Check and cook more if you want. Top with ketchup or whatever sauce you prefer.

I’ve never roasted turnip slices. Is it just spray oil and seasonings?

Looks great. TVP is a little cheaper than Beyond Meat n taste really good also. I use ground flax as the binder. Mushroom powder n dried onions makes things have that umami taste. I love to see people cook it’s so much healthier making it homemade.
