I cut the ingredients in half since I was using 8oz of paneer instead of 1lb of chicken.
I know wild rice isn’t traditionally serviced with Indian cusine but its what I had on hand and it was still delicious.
I love to cook but really don’t cook much Indian food. I’m trying to change that!

Indian is one of our favorite veggie-friendly cuisines and we LOVE cooking with paneer! We usually start with a basic idea of a masala and add or subtract based on what veg we have on hand, what spices, etc. SO GOOD! I just wish it was easier to find paneer here. It’s supposed to be pretty easy to make but I’m absolute rubbish at it and it just never turns out.

I made a paneer indian dish last night as well!! It was SOOO good!
Unfortunately, the closest place to me to buy paneer is 1h 15 minutes away… so a 2.5 hour round trip if I wanted to just go and get some 😭
Have any of you tried freezing paneer? I heard you could but have never tried it or personally known anyone to… just a random Google find. I can get a 64oz block and cut/vacuum seal/freeze it but don’t want to waste the money if it will be icky later on.
