Aww sucks to be writing this because the servers were all so nice and cool but the food here did not impress us at all, especially considering the $800pp price tag. Honestly not worth going into a deep dive. The Paris location just lost a star (I had made reservations already prior to the announcement), and if Vegas had a guide this place probably wouldn’t even get 1. I’ll touch on a few things I did like:
-the little burger amuse-bouche lol
-the bread cart is super cool and the breads were all delicious—no complaints here. Great butter and presentation as well
-the filet was great but it’s just an “American wagyu” filet. Nothing particular special about it, especially considering the price.
-crab and oyster dish could be good but the crab itself was just way too cold. Places really need to stop serving crab straight out do the fridge—it messes up the flavor
Btw when I say it did not impress us, I mean like the desserts from the dessert trolley were like free-hotel-breakfast quality stuff. Uff.

Pricing for a la carte items: artichoke soup $80, crab dish $90, lobster dish $140, steak $155, morel mushrooms side $75 (lol), dessert trolley $45pp

Never been into classic French fine dining. Find it too overwhelming with the richness. I think the world of fine dining has moved on to more light, innovative dishes but GS still seems to be stuck in old times. Not surprised they lost a coveted star and looking through this gallery I wouldn’t even think they would get a star

I can’t help but notice the one with the green crispy disk.. is the exact same Geranium uses for one of their desserts. I wonder where to buy one?
