  3. Eggplant Parm hack. I mix grated parmesan and panko crumbs and drop it in a skillet toasting it until it’s a little round cheese cracker. Then I put one of on top of each piece of eggplant when layering so it’s like the coating but no messy dredging. I’ve baked the eggplant prior to assembling and I also tried without baking, honestly I can’t tell the difference. But I eat eggplant Parm a lot more now that it’s so easy. It’s just two of us so I usually make this in individual ramakins.

  4. Might want to substitute parmesan with something else.

    Parmesan is made with Rennet, which is an animal enzyme found inside the tissue of ungulate stomachs.

    I absolutely LOVE making eggplant parmesan, and its a favorite with my meat eating husband and kids. Yours looks delicious!

    I wish I could have eggplant, but the two times I have had it, I got very very sick. I’m talking “had to go to the hospital for fluids” sick. Docs said it’s some sort of intolerance, idk 🤷🏽‍♀️
