251 calories – Italian wedding soup using meatless meatballs and box couscous. One of the best soups I’ve ever made and so easy.

  1. Very simple: onions, celery, carrots, baby kale, Beyond meatballs (cut in half), couscous, “No Chicken” better than Bouillon, and Italian herbs

    To make two servings:

    premake the Cous Cous according to box directions, leave out oil

    * use 1/4 of the cooked couscous
    * 68 g carrots, chopped
    * 78 g onion chopped
    * 112 g celery chopped
    * dash of Italian or pizza style herbs
    * 2.5 c water
    * handful of baby kale or spinach
    * 2 tsp Better than Bouillion
    * 5 Beyond meatless meatballs cut in half

    Brown Beyond meatballs and cut them in half. Remove from pan, add in veggies and cook those. Add meatballs back in pan along with water, herbs, bouillon, and pre-cooked couscous. Salt to taste. Simmer for a couple minutes and serve.

    We do them in the oven – one tray wonders and make them into spaghetti meatballs, Asian style, Scandi style… This soup is next!

  3. Omfg that looks bomb. They are on sale at my Meijer right now. I didn’t get them because I didn’t know what to do with them. BRB going shopping.

  4. I went grocery shopping the last night. I bought the baby kale. Bought baby carrots. Couldn’t find the meatballs 🙁
