Very simple: onions, celery, carrots, baby kale, Beyond meatballs (cut in half), couscous, “No Chicken” better than Bouillon, and Italian herbs
To make two servings:
premake the Cous Cous according to box directions, leave out oil
* use 1/4 of the cooked couscous
* 68 g carrots, chopped
* 78 g onion chopped
* 112 g celery chopped
* dash of Italian or pizza style herbs
* 2.5 c water
* handful of baby kale or spinach
* 2 tsp Better than Bouillion
* 5 Beyond meatless meatballs cut in half
Brown Beyond meatballs and cut them in half. Remove from pan, add in veggies and cook those. Add meatballs back in pan along with water, herbs, bouillon, and pre-cooked couscous. Salt to taste. Simmer for a couple minutes and serve.
