Recipe makes 3 servings. Per serving, 33g protein, 29g carbs w/7g fiber, 12g fat.
Seitan ingredients:
4oz baby Bella mushrooms
1/2 cup steamed squash (I used an unknown hybrid-looking volunteer squash that showed up in my mom’s garden)
2 tsp tahini
1 tbsp white wine vinegar
1/4 tsp smoked paprika
2 tsp garlic powder
1 tsp onion powder
1 tbsp fresh thyme leaves, + several whole sprigs
1 tbsp fresh sage leaves, + 1 whole sprig
Salt to taste
1/4 cup water
1 cup vital wheat gluten
Other ingredients:
2 apples, sliced, any type (I used honeycrisp)
2 tbsp olive oil
9 cloves garlic, chopped roughly
1 cup vegetable broth
1 tsp salt
Directions:
Place mushrooms, squash, tahini, vinegar, smoked paprika, thyme and sage leaves, salt (I recommend salting until it tastes a little saltier than you think it should, mine ended up tasting a bit undersalted by the end), and water in a high speed blender, blend until very smooth. Place gluten in a bowl and add the wet ingredients, mix to form a dough. Knead for about 10 minutes or until the dough becomes elastic and holds its shape. Divide into three equal pieces and form into a “chop” shape. Wrap in foil and place in a steamer, steam for ~40 minutes (I used my pressure cooker, you might have to go a bit longer using a pot steamer, but check it at 40 and see if it is cooked to a solid texture).
Heat oil in a large pan and add the chops, sear for ~5 minutes on each side, remove and put to the side. Add the apples to the pan and cook for ~10 minutes, adding the garlic in the last 3 or so minutes. Add the broth, sprigs of thyme and sage, and chops to the pan and cook for another 5-10 minutes, or until the liquid is thickened and mostly absorbed.
The photo shows it served on a bed of arugula but I’m not actually sure that added much. I’m having the leftovers for lunch right now with some sourdough and I think I like that better.
