    100g cherry tomatoes

    114g carrots

    349g Moringa Firm tofu

    87g mixed peppers

    100g eggplant

    78g scallion

    10g coconut oil

    87g red onions

    22g garlic

    456g tomato passata /canned tomatoes

    1 vegetable stock

    1 tsp of paprika

    2tsp of turmeric

    1/2 tsp of salt (optional)

    42g violife white block cheese

    Fresh parsley and thyme

    1. Blend the tofu until smooth. Divide it into 2 parts. In one half, add turmeric to give it a yellow yolk colour.

    2. Fry the vegetables and add the cherry tomatoes with spices in a pan.

    3. Add canned tomatoes

    4. Add the yellowed tofu on top of the vegetables in 5 circles.

    5. Add the white tofu on top of the circles

    6. Place lid on pan and leave it for 10mins

    7. Add the green part of the scallions, fresh herbs and violife cheese on top.

    8. Eat it as if it’s your last meal. Enjoy with toasted bread, avocado , vegan feta and hummus.

  2. I love rooibos tea. Moved to Europe a year ago and it’s the one thing I go to the expat store for. Can’t and don’t want to live without it.

  3. I love how this meal was big enough to necessitate an entire tray. That’s the type of meal I need.
