    Just wanted to share this massive salad I made for lunch with you all – yes it is in a large popcorn bowl

    Recipe:
    50g Baby spinach, chopped
    100g Carrots, julienne and quick pickled with 50mL of vinegar, 10g of erythritol, some salt and water
    1 tbsp of chopped fresh spring onions
    1 tbsp of chopped fresh mint
    145 g of firm tofu, crumbled
    9g of nutrition yeast
    Add all ingredients, plus some of the Leftover pickle juice to a bowl and mix.

    28 g of protein and 300 cal according to my MFP calculations
