This is a pretty quick and easy recipe! I make this just about every week, here’s the recipe I use (some quantities are more vibes than quantitues)
**Recipe**
>
> 16oz tofu, firm, pressed and cut into cubes
>
> 3 Tbsp **tamari**
>
> 3 Tbsp apple cider vinegar (more/less depending on how vinegary you like it)
>
> 3 Tbsp water or vegetable broth
>
> 2 Tbsp brown sugar
>
> 1 Tbsp corn starch (plus extra for the tofu)
>
> 1 Tsp red pepper flakes (more/less depending on how spicy you like it)
>
> 4-5 cloves of garlic, minced
>
> green onions
>
> sesame seeds
>
> a little bit of fresh ginger, minced
You can make the tofu however you want. A shallow fry would work great. I like to bake it, because I’m a little lazy. I toss it in some corn starch and oil, spread the cubes out on some parchment paper on a baking sheet, and bake it at 350F for ~45-50 minutes, flipping half way through. The corn starch makes it crispier, but it’s honestly optional.
Mix the apple cider vinegar, tamarind, broth, brown sugar, corn starch, and red pepper flakes and then set this mixture aside.
Cut up the green onions. I take some of the lighter, stalk-ier parts, and add that into the mixture.
Once the tofu is ready, fry up the minced garlic and ginger in some oil in a big pan, and once it starts to brown turn the heat down and add the sauce you prepped earlier. Once it has darkened and thickened, toss in the tofu. Turn the heat off and stir, making sure to coat the tofu in the thickened sauce.
Serve it right away over rice, garnished with sesame seeds and the green onions.
NB: measure garlic with the heart, not the number of cloves. But be **stingy** with the ginger. It’s so powerful!

I can find tamarind in the produce section and tamarind concentrate paste in a jar. I see online there is tamarind sauce as well. What exactly am I looking for?

I hate pressing tofu. It takes forever, I go through a whole roll of paper towels, and it still crumbles if I breathe on it.
