Meal prep recipe x6 portions
200gr green lentils
370gr zucchini (one zucchini)
3 garlic
160gr frozen pumpkin
115gr plum tomatoes
75gr quinoa (I use 3 color quinoa)
200gr minced soy
48gr frozen spinach
1 liter water just boiled
Veggie stock
I started cutting the veggies (garlic zucchini and tomatoes)
Salted for 5 min add the lentils the veggie stock and water ,let it boil for 15 min
Add the frozen veggies pumpkin spinach wait till boil again
add the rest of the ingredients minced soy and quinoa, let it boil till the quinoa is cooked approx 11 min
And that’s all
“Optional” you can add 3 tbsp tomato sauce , nutritional yeast or smoked Chilies for more flavor
