Paneer (acid set cheese)

  1. *Recipe:*

    – Bring 1 gallon of Whole Milk to a boil.

    – The moment it begins to boil remove it from – the heat.

    – Slowly drizzle in 12 TBS of vinegar while stirring continuously, the milk will curdle immediately.

    – Let it stand for 10 minutes.

    – Then pour into a strainer lined with a decent sized piece of cheese cloth.

    – Run cold water through the curds and move them around with your clean hands gently so you don’t get burned and you work out the vinegar.

    – Then take all the corners of the cheese cloth into your pointer finger and your thumb and begin to compressed the curds draining out whatever else is left from the mixture

    – Fold it up and place it flat on a plate and stack several other plates on top to compressed your now cheese curd disk.

    – Place it in the refrigerator to firm up for about 2 hours.

    Boom! homemade delicious Paneer : ]

    I am forever grateful to you. I love paneer. Never thought I could make it at home! Is there a preferred milk you use?

  3. Here are my paneer modifications that have made me extremely happy:

    1. Add 1/4 cup total of vinegar, lemon juice and yogurt mixed together instead of just vinegar or just lemon. The yogurt makes it taste better too

    2. Instead of cheese cloth I use a nut milk bag. It’s really convenient and reusable.

    3. I press the cheese after it is cool enough to mess with. I wrap the nut milk bag in a clean, lint free kitchen towel or something and then put a book etc on top for a while.

    Pressing makes it a lot easier to handle and cut. Otherwise sometimes mine falls apart a bit. Not like ricotta, but just crumblier and difficult compared to store bought

    Turned out awesome. Too much work tho. 😉

  5. THANK YOU SO MUCH! The closest place to me to get paneer is a 2.5h round trip… and I LOVE paneer!! I never looking into making it myself… I just assumed it would be a long complicated process. Thank you, thank you, thank you!!!
