Fushikino is a small Kaiseki restaurant with an amazing sake program,and it’s held a Michelin Star for over a decade. All the dinnerware is also made by the owner, Yusuke Miyashiya. He serves the same sake in different cups to show the difference in taste just depending on the vessel. More narrow cups brought out sweetness while wider cups allow more acidic notes to come out in the sake.

This was such an amazing dining experience in every aspect. All the dishes really showcased the quality of the ingredients, and the chefs skill in different cooking techniques. Highlight dishes for me were the steamed egg custard and the Seko crab. The 9th picture was a shot of sake cooked in the crab head after eating all the meat!!! Insanely sweet and soothing that paired well with the flavor of the crab head.
