My wife and I had tried to get here in July of 2020 but Covid had other plans. We were so excited to get here. We tried for alchemist and geranium as well but they were both closed for summer break so this was our only proper fine dining in Copenhagen the 3 nights we were there.

It really met the hype for us. We have started cooking a lot more plant based at home so this was the season we wanted to try. The one way to describe it was that they’re a well oiled machine. From the moment you arrive, everything is coordinated perfectly. Everyone is there to greet you when you walk in the door. All hands on deck here as well. You often will get a chef dropping off and explaining the meal. I think the service and atmosphere is what really made it for us. They really try to deliver on the hype. It has to be daunting.

The food was very good. We enjoyed every dish. You could try some weird things like a pinecone and flower soup. So many vegetables and tubers we hadn’t heard of. Everything was beautiful. Sauces were great. The best part was that things were so light. It was the lightest tasting menu I’ve had. I left and felt I could grab an ice cream. When you’re traveling I’ve gotta say it’s a nice change sometimes.

We did the wine pairing. I really liked the fact that they used smaller producers from all over Europe that they partnered with. It wasn’t this heavy hitter Bordeaux and burgundy wine list. That’s us, we like weird wines so maybe it wouldn’t be to someone else’s liking. A lot of whites which was refreshing as it was a warm day.

I’ll definitely visit them again at a pop up. Really wish I did Kyoto but I’ll find som time infesting to visit them again.
